How a villa chef plans your menu in Bali, meal by meal
How a full-day villa chef in Bali builds your menus: the food brief, menu options, cuisines, kids and dietary needs, premium ingredients and changes mid-stay.

A villa chef menu in Bali starts with your brief: who is eating, what they love, what they avoid and which meals you want cooked. With menu planning with a full-day villa chef, the chef turns that brief into menu options, you approve them, and the team shops fresh for each meal. Groceries are billed at cost with receipts.
This guide walks through how menus are planned, what a typical day of meals can look like, and how to brief the chef so the food fits your group from the first meal.
- Send a brief: guests, ages, tastes, allergies and the meals you want.
- The chef proposes menu options; you adjust and approve before shopping.
- A full-day package is three meals you place as breakfast, lunch or dinner.
- Menu changes during the stay are included at no extra cost.
- Premium ingredients are quoted and approved before anything is bought.
How the menu is planned before you arrive
- Brief. You share guest count, ages, cuisines you like, spice level, proteins you love and any no-go ingredients.
- Options. The chef proposes menu options built on your brief and on what is in season.
- Adjust and approve. Swap courses, ask for substitutions, then lock the plan.
- Shopping. The team plans and shops to the menu, daily for fish and greens and every second day where it makes sense.
- Service. The chef cooks, plates and serves, and the kitchen is cleaned after every meal.
Our menu selection guide covers the full list of cuisine styles and dietary adaptations if you want to read more before sending a brief.
What a day of villa meals can look like
A full-day package is three meals, and you decide what each one is. Three breakfasts are allowed, as are two dinners and a lunch, or any mix. The examples below show the shape of a day, not a fixed menu. Your chef proposes the actual dishes.
| Meal | Light day | Celebration day |
|---|---|---|
| Breakfast | Fruit, eggs and fresh bread on the terrace | Long brunch with a few shared plates |
| Lunch | Salads and grilled fish by the pool | Skip lunch and save the meal for dinner |
| Dinner | Family-style Indonesian spread | Plated courses with dessert |
If you want a single celebration night with a tasting menu and a larger brigade, that is a different product. See our fine dining set menus for that format.
Cuisines you can ask for
Each cuisine has its own specialist head chef, and we match the chef to the food you want. The live team covers:
- Italian and Mediterranean, such as hand-rolled pasta and whole grilled fish.
- Japanese and seafood, such as sashimi and robata-grilled fish.
- Indonesian and Balinese, such as bebek betutu, lawar and nasi goreng kampung.
- BBQ and open flame for poolside grill nights.
- Plant-based and wellness menus, including vegan and Ayurvedic dishes.
- Pastry, from plated desserts to celebration cakes.
On stays of 7 days or more you can switch specialist chefs day by day. Read how that works in switching cuisines on a weekly villa chef stay.
Want menu options for your villa dates?
Send your dates, guest count, villa area and a few food preferences. We reply with an available chef, a sample menu and a written quote.
Kids, allergies and mixed tables
Families often need two menus running in parallel. The team can cook milder, familiar dishes such as pasta, grilled chicken and rice bowls at an earlier kids' meal time, while adults get a proper dinner later. Put ages and preferences in the brief.
For dietary needs, the chef plans around vegetarian, vegan, gluten-free, dairy-free, shellfish allergy, pregnancy-safe and halal-sensitive preferences. A shared villa kitchen is not a certified allergen-free facility, so for medically critical allergies we discuss prep separation and labelling before the first meal. Our guide to kids menu ideas for family villa dining has more family examples.
Premium ingredients and what they cost
The day rate covers the chef, the assistant and all the work, including menu planning and market runs. The food is billed separately at cost, with receipts. Before your stay we build a written food estimate from your meal count, cuisine and guests.
Lobster, imported wagyu, oysters and truffle sit outside a normal market budget. They are priced for you and approved before anything is bought. Alcohol is not included, but you can bring your own or ask us to source it at cost.
Changing the menu during your stay
Menu changes during the stay are included at no extra cost. Small swaps on the day, such as a different protein, are the easiest to handle. Larger changes work best with a day of notice, so the next shopping run matches the new plan.
FAQ
Do we get to see the menu before the chef cooks?
Yes. You send a brief with tastes, allergies and the meals you want, and the chef proposes options based on it and on what is in season. You adjust and approve before shopping starts.
Can we change the menu during the stay?
Yes. Menu changes during your stay are included at no extra cost. Small swaps, such as a different protein, are easiest. Big changes are simplest when you give the chef a day of notice so the shopping can follow.
Can one villa chef cook several cuisines?
Each cuisine has a specialist head chef at myCHEF, and we match the chef to the food you ask for. On stays of 7 days or more, Chef Rotation lets you change specialist chefs day by day at no extra day-rate charge.
How are allergies handled?
Tell us dietary needs before the first menu is planned. The team routinely adapts for vegetarian, vegan, gluten-free, dairy-free, shellfish allergy, pregnancy-safe and halal-sensitive preferences. A villa kitchen is not a certified allergen-free facility, so medically critical allergies need a written briefing.
Are ingredients included in the day rate?
No. The shopping work is included, and the food itself is billed at cost with receipts. Premium items such as lobster, imported wagyu, oysters or truffle are quoted and approved before purchase.
