Ayam taliwang needs a real grill or a very hot oven and a marinade that has had time. It is not a dish to invent at 6pm from a cold bird. Sate rembiga needs the same honesty about fire. If the villa forbids charcoal, we say so and we change the menu. We do not smuggle a grill onto a balcony because the view is good.
The sambals are the work. A chilli paste that is toasted properly smells like the island. A bottled shortcut tastes like a shortcut. We make the sambal for the number of people who want it, and we keep a plain dressing for the people who do not. Eggplant and water spinach are bought for that day. They do not improve by waiting until tomorrow’s lunch, so the feast is planned as dinner, not as leftovers you did not ask for.
Rice is not a garnish. A Lombok table without enough rice is a mistake. So is a table with only meat. The green plates are there so the meal has somewhere to go between skewers. Peanuts on the spinach are optional the moment anyone says allergy. Write that in the first message.
If this night sits inside a longer hire, the shopping for the feast is still marked separately so the receipt makes sense. Leftovers are not a second service. If you want lunch the next day from the same kitchen, book that lunch. A feast cooked for dinner is seasoned for dinner. Rice and chicken that sit out while people talk are a hygiene problem, not a bonus meal. We clear what we cooked. Tell us if the villa staff will keep a labelled box in the fridge, and we will say what can be kept. Shrimp paste and a warm kitchen are not friends overnight.
Serve rice while it is hot. Cold rice makes a careful sambal taste careless. Guests who know Bali food will still taste the difference if the chilli and the grill are honest. Do not ask us to rename a Balinese banquet as Sasak. If you want both cuisines in one week, give them different nights. The island you are standing on should be the one on the plate that evening.
