For guests with food allergies or strict dietary requirements, a private chef is one of the safest dining options available in Bali. You communicate your needs directly to the chef, the chef builds the menu around them, shops accordingly, and cooks in a controlled environment with no cross-kitchen contamination from other tables' orders. Dietary Categories We Handle myCHEF chefs handle vegan, gluten-free (including coeliac severity), halal, keto, nut-free, and dairy-free requirements, as well as combinations of these. For vegan guests, our chefs build complete-protein menus using tempeh, tofu, legumes, and whole grains rather than simply removing meat. For gluten-free guests, every sauce and condiment is checked for hidden wheat sources — soy sauce, marinades, and stock cubes are replaced with safe alternatives throughout. HACCP Allergen Safety Protocol All myCHEF chefs are HACCP-certified. For allergen-sensitive bookings, this means: allergens are documented before shopping, shopping lists exclude the allergen entirely, dedicated clean equipment is used for severe allergies, allergen-free dishes are prepared before any dishes containing allergens, and service is separated to prevent cross-contact. For anaphylactic-severity allergies, the allergen is simply absent from the kitchen. Cross-Contamination Control A private chef at your villa cooks only your food — there are no other orders running in parallel. When an allergen is declared, the chef does not introduce it into the kitchen. This is structurally different from a restaurant kitchen where multiple dishes are prepared simultaneously on shared equipment. For gluten/coeliac, kecap manis (contains wheat) and standard soy sauce are replaced with tamari or coconut aminos throughout. For nut allergy, peanut oil and nut-containing sauces are removed and replaced entirely. How to Declare Requirements At booking via WhatsApp, provide: every allergy and its severity (trace reaction, intolerance, or anaphylactic), every dietary category (vegan, halal, keto, etc.), all hard exclusions, preferred cuisines, and any children's specific requirements.
